Super Microwave!

Ahhh! It's the attack of the microwaves!

Well maybe only mine... but still...

Today, I learned that I have a super microwave!

Good news and bad news.

Good news: it doesn't take long to cook/ heat food = less waiting time = yay! I can be impatient sometimes..

Bad news: food will explode if the heat is too hot to handle = big mess = clean up duty = no food = no fun..

Anyway, if you've made quinoa before, then you know that it is usually made like rice on the stove. Since I wanted a quick post-workout meal, I thought I'd do quinoa in the microwave.

Well, it wasn't as quick or clean as I had hoped, but it worked!

1/4 cup uncooked quinoa, rinsed
1/4 cup almond milk
1/4 cup water
1/2 cup pure pumpkin (maybe a little less)
1 tsp chopped almonds
fresh raspberries

I started with the quinoa, almond milk, and water in a large bowl. Apparently this bowl wasn't large enough because after the first round in the microwave, quinoa exploded all over and spilled out of the bowl. *The cooking liquid boils rapidly and is very active. Make sure you put yours in a deep container to keep the cooking liquid inside the container. I set the microwave for three minutes, and after that, I stirred the quinoa and let it rest for a minute.

Then I repeated this set three more times, only setting the microwave for one minute each time. It took me three times until the quinoa was cooked (the quinoa was large, semi transparent, and the ring was visible. I also tasted a bit to make sure it had the soft consistency.)

After the third time, I added the pumpkin and a splash of almond milk and water, stirred it up, let it rest, and then put it in the microwave again for a minute.

Finally, into another bowl, topped with nuts and fresh raspberries! Yum!

Although it took some time, it was definitely worth the wait. (:
