Strawberry Oatmeal Cookies

Summer time means freedom, sun, and fresh produce!

I love fresh fruit and vegetables! Especially grilled fruits and vegetables!

Grilled fruit? Yeah, sounds weird right? But Grilled peaches and nectarines are divineeeee!

The heat brings out the sweetness of the natural sugar, and the fruit tastes like warm peach pie (:

Well, the summer also brings fresh, bright red and juicy strawberries!

Perfect to make cookies with? Why yes! And, these cookies are low cal!

All the more reason to eat a bunch! (;

I have adapted the recipe from here

Get ready to bust out your aprons and baking caps because you'll definitely want to try this recipe!

Ingredients:

3/4 cup whole wheat flour
1/2 tsp baking powder
1 cup rolled oats
dash of salt
a little less than 3/4 cup brown sugar (not packed)
5 Tbsp unsweetened applesauce
1 tsp vanilla
1 egg white
3/4 cup chopped fresh strawberries
1/3 cup semi sweet chocolate chips ( I used the mini chips)

First, preheat the oven to 350 degrees F.

Then, combine your dry ingredients (flour, oats, salt, and baking soda) in a large bowl, and whisk together.

In a separate bowl, combine the brown sugar, applesauce, vanilla, and egg white. After, slowly mix the dry ingredients into the wet ingredients. Be careful not to overstir to avoid tough cookies! *If the dough seems too tough, then add a splash of water or milk. After fully incorporated, fold in the strawberries.


And then the chocolate chips! Yum!


Spray a baking sheet, and spoon a little less than a tablespoon size balls.


Get ready for the oven!


We made one large cookie on this trial run!


And after 9 minutes or so, they look like this!
