Each group was assigned a different recipe and when I heard that my professor assigned a group Spaghetti squash, I thought we were going to try spaghetti with squash.
Boy was I surprised! When we all congregated together at the island table with our finished products, I saw the squash and was excited to try it! I wasn't prepared for the taste however.i really enjoyed the second and third bites.
Don't expect it to taste like pasta because it sure doesn't! It's just called that because after you cook it, it strings out like spaghetti. The squash has more of a bite and isn't as chewy as spaghetti. I like it though because it adds another texture tithe dish.
I definitely encourage you to try this one for yourselves!
Ingredients:
1 Spaghetti Squash
1 onion, chopped
1 clove of garlic, chopped
15 oz. canned tomatoes
12 oz. tomato sauce or your favorite spaghetti sauce
1 tsp basil
1 tsp oregano
Pepper to taste (if desired)
Directions:
Cut the squash in half lengthwise. This will take some real man power! Then use a fork or a spoon to scrape out the seeds and pulp. It'll slightly resemble the inside of a cantaloupe or pumpkin or any melon.
Fill a large, deep sauce pan with 2-3 inches of water. Place each half face down in the pan and cover it with a lid. Turn the stove on medium to high heat, and let it steam until fork tender. (this took about 30-40 minutes for me).
While the squash cooks, spray a sauté pan with cooking spray an sauté the onions and garlic until slightly brown (about 5 minutes).
Then add the tomatoes, tomato sauce, and spices to the onions and garlic. Let the sauce summer on low until it's time to serve, stirring occasionally.
Once the squash is fork tender, hold each half with tongs while scraping the insides of the squash with a fork into a serving dish. This is when it starts to look like spaghetti! (:
It seemed like a small squash, but it sure provided more than enough "spaghetti" for me and my family!

Then pour the sauce over the squash and it's ready to serve!
If you want more of a spaghetti feel, add some Parmesan cheese! Enjoy!
