So there's two sides to my summer situation: an upside and a downside
Bad news first?
I am currently unemployed, so no monies for me...
A job in the food industry would be ideal! I'd love some exposure to anything food related because I'm thinking of attending culinary school after I graduate.
BUT a job anywhere would be nice (:
Finally! Good news!
I have more time to cook and bake and try new recipes and eat more pumpkin!
This recipe I adapted from CCK
She added cream cheese to add more of a cakey feel, but I decided to omit (:
They're just as delicious without!
Pumpkin Bars:
- 1/2 cup whole wheat flour
- 1 tsp cinnamon
- 1/4 tsp pumpkin pie spice
- 1/2 tsp baking powder
- 1/4 tsp baking soda
- 1/4 tsp salt
- 1 eggwhite
- 3 tablespoons brown sugar
- 2 Tbsp splenda
- 1/2 cup pure pumpkin
- 2 tablespoons applesauce
- 1/2 tsp pure vanilla extract
Combine the egg white, brown sugar, splenda, pure pumpkin, applesauce, and vanilla in a small bowl and set aside.
Then combine the dry ingredients (flour, cinnamon, pumpkin pie spice, baking powder, baking soda, and salt) in another bowl.
Slowly add the wet ingredients into the dry, being careful not to over mix. Otherwise, the bars will be tough and firm ):
Then the mixture will turn out like so!
Spray an 8x8 pan (or a smaller pan if you prefer thicker bars) and pour the batter and spread to even it out.
Delicious and it's not even baked yet!
Ta- dah! After 14 or so minutes, the baking process is complete! Let cool, or devour immediately!
These bars are amazingly moist because of the pumpkin and taste just like Thanksgiving (even when it's not!)
