Light and Creamy Chocolate Pudding

Say what now? Avocado... for dessert...?

Why yes! Totally unassuming, but amazingly delicious!

Thanks to pinterest (follow my boards here!) I've seen a few recipes, but I've adapted my own take on this decadent dessert.

Ingredients:
1 1/2 Avocado
3 Tbsp Cocoa Powder
3 Tbsp Unsweetened Almond Milk
2 Tbsp Agave Nectar

Place all of the ingredients in a food processor, and pulse away!


Unfortunately our food processor was having some technical difficulties when we were doing our trial run.. so we had to transfer the mixture into our blender, which worked magnificently I might add.


Now I understand that this may not look appetizing, but the taste sure makes up for its looks!

The avocado absorbs the chocolatey flavor from the cocoa powder, and it gives it the creamy pudding feel. The more you pulse, the lighter and more aerated it will be (almost like a mousse).



Although this recipe is dense with calories and fats, you have to remember that avocados contain the good healthy fats, so it's perfect for a sweet treat!
