Larabars: Take Two

Oh Brittany...

doesn't like pecans.. what a shame, shame, shame! They are so deliciously addicting!

She wanted to get in on the Larabar goodness, so we decided to whip up another batch with less pecans.

Oatmeal Raisin Cookies are my absolute favorite, so here's a spin on the Oatmeal Raisin Larabar

Recipe (adapted from here):
  • 1/4 cup crasins
  • 1/4 cup dried dates or plums
  • 6 T quick oats
  • 1/2 cup mix of nuts (we used 1/6 c pecans, 1/6 c cashews, 1/6 c almonds)
  • 1/8 tsp salt
  • 1/4 tsp pure vanilla extract
Place all of the ingredients into the food processor... and pulse away!




The mixture should have a mealy and sticky consistency. If it doesn't feel sticky enough, it won't hold together well, so add more dried fruit. Dates and plums work well.



Dump contents onto a surface to roll flat into bars or ball shapes.


We like to go with the traditional bar shape.


I also found that a pizza cutter helps when forming the bars evenly (somewhat).


Place in the fridge for a later snack or enjoy the sweet and savory treat on the spot! (:
