So lately, I've been into the fruit and nut bars for snacks. They provide some protein and essential (needs to come from the diet) omega-3 fatty acids (the ones your body can't make) AND they're just plain delicious! I usually go for the KIND bars, because those are the ones they sell at my university store. It's so sad because they don't sell a wide variety of flavors or brands.. which leads me to the Larabars! A week ago, I tried the Lemon flavored one, and I really, really liked it! Because so many of these have walnuts and peanuts, (darn those allergies) I thought I'd make my own!
Chocolate Larabars (adapted from Chocolate-Covered Katie):
1 cup pecans (nut of your choice)
1 1/3 cups dried plums (pitted dates or raisins work as well)
1 tsp vanilla
3-4 Tbsp cocoa powder
1/4 tsp salt
Place all of the ingredients into the food processor
And pulse away!
Soon, the fruit and nuts will be crushed into pieces.
Then you can really see the sticky consistency of your lovely mash.
Then you can dump out the contents onto parchment paper or foil in this case.
And then form it into bars..

And place in the fridge! Or, eat on the spot! A perfect homemade snack!
