Dinner in a Cup: Quinoa Pizza Bites!

When I was at the store with my family, I told my dad what we were having for dinner and showed him what it was. I laughed because he pronounced it phonetically, Key-Noah. Oh dad.. He said it looks like little bird seeds, which coincidentally, it is a seed! This little seed is packed with protein and essential amino acids, how could you go wrong?!

I really wanted to try a recipe of quinoa for breakfast... but this recipe made it into the menu first!

Quinoa Pizza Bites (adapted from here):

1/2 cup uncooked quinoa
1 large egg
1/2 cup chopped onion
1/2 cup shredded mozzarella cheese

1/4 cup mushrooms (optional)
1 tsp minced garlic
1 Tbsp dried basil
1/4 cup tomatoes, diced
1/4 tsp salt
1/2 tsp paprika
1/2 tsp dried oregano
Pasta (or Pizza) sauce for dipping


Place the quinoa and 1 cup water in a pot, and place the lid on top. Bring the quinoa to a boil, and then let it simmer for 20 minutes.


Before mixing the ingredients together, preheat the oven to 350 degrees F. Then place all of the ingredients except for the pasta sauce into a bowl, and mix well!


Spoon into a greased muffin tin, either mini muffins or regular sized.


Place in the oven for 15-20 minutes...


or until golden brown! Serve with a small bowl of sauce for dipping, and enjoy!

Also, I found that it's way better to use fresh herbs!

So there's my quinoa for dinner. Maybe i'll come back with a breakfast quinoa cup recipe (:
