It is a tradition of ours, that every year, my mom makes quiche for breakfast on Christmas morning. It's filled with yummy melted cheese and salty ham and turkey baked in a blue speckled tart dish! Oo, my mouth is watering just thinking about it!
So this lovely memory was my inspiration for this dinner menu, except I decided to make little personal quiches.
Personal Spinach Quiche:
2 cups frozen spinach
about 1/4 cup turkey deli meat (ham or chicken works well too)
1/4 cup diced onion
1/4 shredded cheese
1 egg (1 1/2 eggs if you like eggs!)
First preheat the oven to 350 degrees F.
I diced the onion, sliced the deli meat into little squares, and separated the pieces from each other.
I then defrosted the spinach, used paper towels to absorb all of the water. Make sure to remove all of the water, or as much as possible so that the final result isn't mushy.
Once the water was removed, I mixed all of the ingredients together in a small bowl.
Once thoroughly mixed, I spooned the wonderful mixture into a greased muffin tin. I was able to fill each of the four cups almost to the brim.
After 15-18 minutes in the oven, my creations were done!
Greasing the tin beforehand definitely helped to remove the mini quiches easily from the tin (especially since I didn't use a non-stick pan).
Hooray! And there you have breakfast for dinner!
